Tasty Bites: Burrito In A Bowl

I love throwing random foods together and making a tasty meal out of it. I’m more of a cook than a baker, and some of my “Tasty Bites” recipes have been a little difficult to refine as I do a lot of guessing on the amounts of some ingredients. No bakery would ever hire me!

This meal is loaded with whole grains, fresh vegetables, and tender chicken. Many of the ingredients in this recipe don’t have an amount listed – add them to your taste and liking. You will have leftovers of some of the ingredients for tomorrow’s lunch! And if you like, you can even wrap it in a burrito!

I like to buy chicken breast on sale, cook it, and freeze in ½ cup portions. Then it’s ready to grab for a burrito bowl, my favorite pizza, or for a quick sandwich. You can season, bake, and shred it, or if you prefer, cut into pieces, cook on the stove top, and freeze like I did in this recipe.

Burrito Bowl

1 chicken breast

1 ½ tablespoons Cajun seasoning or Emeril’s Essence

1 tablespoon extra virgin olive oil

1 cup brown rice

Juice of 1 lime

¼ cup chopped cilantro

Black or pinto beans (I use canned)

Chipotle chili powder

Cayenne pepper

Sweet corn and white shoepeg corn kernels

Tomato

Avocado

Salsa

Chopped jalapeno

Sliced green onion

Shredded jack and cheddar cheese blend

Sour cream

Cook brown rice according to package directions. When done, stir in lime juice and cilantro. Keep warm.

Dice chicken into bite-sized pieces. Sprinkle with Cajun seasoning or Emeril’s Essence and cook in olive oil until done. Set aside.

Drain and rinse beans. Sprinkle with chili powder and cayenne to taste and heat in microwave for 1 min. Set aside.

Build your bowl! Rice on the bottom, topped with beans, chicken, and any (or all) of the other toppings listed above. There are no rules – just enjoy!
