Tasty Bites: Father Tim's Christmas Morning Breakfast Casserole

Several years ago, my mom gifted me with a copy of Jan Karon’s Mitford Cookbook and Kitchen Reader. In Jan Karon’s books,  Father Tim and the other characters are always whipping up delicious meals, so she published a cookbook of those recipes.  One recipe in particular has worked it’s way into our family’s Christmas tradition - Father Tim’s Christmas Morning Breakfast Casserole. My husband began making this one year and now even my nephew makes it some years, but someone always makes it every  year. This is perfect for Christmas morning because it is assembled the night before and allowed to sit in the refrigerator, ready to bake. 

Start by browning a pound of pork sausage in a skillet. While it is browning, thinly slice three green onions, using the white and most of the green parts, and throw them in when the sausage is almost done browning. Use a slotted spoon to transfer this to a paper towel-lined plate.

Tasty Bites: B is for Breakfast!

There are eight B vitamins, usually referred to as the B-complex vitamins. B vitamins play an important part in the health of skin and mucous membranes, including hair, mouth, and eyes. Folic acid is a B vitamin and proper intake is essential for women to avoid certain birth defects. B vitamins also aid in the function of the nervous system by the breakdown of fats and proteins, and play important roles in heart health, circulation, and immunity. No one B vitamin does the trick – they work their magic when they are consumed together.

Deficiency in Vitamin B can lead to insomnia, memory loss, numbness and tingling, and a host of other symptoms. A well-balanced diet will ensure proper Vitamin B intake, but some people, including the elderly and people under excessive stress, need supplements. Check with your doctor if you think you may be deficient in Vitamin B.

Works For Me Wednesday: Breakfast Shortcakes

In our household, a Saturday morning tradition is that Daddy makes breakfast for the girls, while Mommy tries to sleep in. The favorite version of breakfast is based on a simple recipe that appears on every box of Bisquick: Strawberry Shortcakes. (Disclaimer: No, we aren't affiliated with Betty Crocker or General Mills, and we get nothing for this recipe from them.)

Since we're making breakfast shortcakes (think big gooey cookies), and not a fruit dessert, we changed the recipe considerably.
