Tasty Bites: 4-Ingredient Pork Loin

This week’s recipe is short and sweet! That is a welcome expression in my cooking world most of the time. A simple recipe that yields a delicious, juicy, flavorful, no-fail pork loin? Yes, please! I stumbled upon this recipe and made this on Easter Sunday. It was nice to have such an easy dish to go along with some other, more time-intensive dishes. This pork loin does not require a special occasion- it is perfect for anytime.
The marinade consists of McCormick Montreal Steak seasoning, balsamic vinegar, olive oil and a 2-lb pork loin. Have a 4 lb pork loin? Just double the recipe and add about 20 minutes cooking time per pound. Mix the marinade ingredients together. Place the pork inside a zipper bag and pour the marinade over it. Squeeze the air out so the seasonings contact every surface of the meat. Let this marinate in the refrigerator for at least 2 hours. Overnight is even better if you remember.
Preheat the oven to 350 degrees. Place the pork loin and the marinade in a 9x13 pan. Roast about 20 minutes per pound or until the internal temperature reaches 145 degrees. If you happen to have one of those meat thermometers that beep when the meat has reached a certain temperature, this recipe would be a perfect use for it. Remove from the oven and tent with foil for about 10 minutes before serving. This allows the internal temperature to rise another 5 degrees and the juices to distribute themselves throughout the meat. If you cut it right away, the juices run out more quickly, resulting in meat that is more dried out.
This was juicy with a pretty, browned exterior and the flavor from the marinade really penetrated the entire roast. There was no hint of dryness.
Pair this with a salad or any side-dishes of your choice. We enjoyed leftovers in sandwiches which were equally delicious.

Balsamic Roasted Pork Loin

1/2 cup balsamic vinegar
1/2 cup olive oil
2 pounds boneless pork loin roast
Dissolve steak seasoning in balsamic vinegar, and then stir in olive oil. Place pork into a resealable plastic bag and pour marinade overtop. Squeeze out air and seal bag; marinate 2 hours to overnight.
Preheat oven to 350 degrees F (175 degrees C).
Place pork into a baking dish along with marinade. Bake in preheated oven, basting occasionally until the pork reaches an internal temperature of 145 degrees F (65 degrees C), about 45-60 minutes. Let the roast rest for 10 minutes before slicing and serving.
